Jean Defaix inherited a fourth generation estate and has built an enviable reputation for top quality domaine-bottled Chablis. The estate is now managed by his equally able son-in-law Daniel Dampt. However, the house style has not changed. It remains clean, ultra-pure, with bright steely acidity and not so much as a hint of oak. Delicious when young, they can also age gracefully.
Young winemaker Vincent and Sebastien have worked their magic on this wine, weaving in a touch of oak to soften the steely character with which Chablis is so often associated. The fruit complexity is magnificent and the length goes on until the day after. Grand Cru Chablis is the top of the tree and the wine greatly benefits from a few years bottle age, so if possible putthe wine in the cellar for four or five years.
